Our Kashi Christmas day Bandara (feast) will be on Tuesday, December 25th at 1:30 pm.
We will be serving an Italian menu, everyone is invited and everyone is welcome!
Ma always made a point to make sure no one was left alone for the holidays.
If you know someone who may be alone, please invite and bring them.
This next recipe is delicious and easy to make.

Always and forever at the Feet of my Guru, Ma Jaya Sati Bhagavati
Ingredients & Utensils
- 12 – Vietnamese Rice Wrappers – (double them up = 6 full rolls)
- Water – (to briefly submerge rice wrappers)
- 1 bag or clamshell – Baby Salad Arugala- Organic
- Fresh Basil – Organic
- Fresh Cilantro – Organic
- Mung Bean Sprouts – Organic – (use any sprouts you like)
- 1 – Carrot – Organic – grated
- 1 – Beet – Organic (optional)
- 1 – Cucumber – Organic – strips
- 1 – Avocado – Organic – strips
- Utensils
- Chef Knife
- Cutting Board
- Grater
- Mixing Bowl
- Small bowls to hold all the vegetables
Directions:
Step 1: Prep Vegetables:
Wash and drain all herbs and sprouts.
Peel carrot and shred.
Peel beet and shred (optional).
Peel and slice cucumber into long sticks or strips.
Peel and cut avocado into strips.
Put all vegetables into bowls and line them up on the counter.
Step 2: Dunk Two Rice Wrappers into Water and Add Vegetables on top of Wrapper:
Dunk a rice wrapper into bowl of water and place onto cutting board.
Repeat and place the second wrapper on top of the first so it will be double thick.
I know it seems strange that this brittle rice skin will work, but it only needs a brief dunking in the water to soften. If it is left in the water too long it will be too soft and not work.
Place each vegetable across the wrapper in a line, and repeat until finished.
Step 3: Roll the Wrapper, Cut and Serve:
Next, with one hand move the vegetables towards you, roll the bottom of the wrapper over and tightly roll up.
It is kind of like rolling a burrito or egg roll but it is not necessary to fold in the sides.
Cut in half or smaller sections and display on serving platter.
Serve with your favorite sauce.
