Ma’s main teaching is to be kind to everyone. As her Baba would say, “Treat everyone as the Christ”. It is this essence that is Kashi. Kashi is an oasis for every heart and welcomes people from all walks of life without distinction as to religion, race, gender, color, creed, sexual orientation or gender expression. This is Ma and Baba’s teaching to “Feed Everyone”.
Today’s recipe is a classic cold soup from Spain called gazpacho. It is refreshing and delicious.

Always at the Feet of my Guru, Ma Jaya Sati Bhagavati
Ingredients:
- 5 Plum (Roma) Tomatoes or 3 regular Tomatoes – Organic
- 1 Large or 2 Small Carrots – Organic
- 1 Onion – Organic
- 3 stalks of Celery with the leaves – Organic
- Water
- 1 Cucumber – Organic
- 1 or 2 Lemons – Organic
- Salt – Himalayan Pink
- Black Pepper Ground – Organic
- Hot Pepper Flakes – Organic (Optional)
Utensils:
- Cutting Board
- Knife
- Soup Pot
- Large Pyrex Baking Dish – to cool the soup
- Blender
- Whisk
Directions:
Step 1: Wash and Prep Tomatoes, Carrots, Onion, Celery.
Wash vegetables and cut into medium chunks and place into soup pot.
Step 2: Cook Soup until Vegetables are Tender.
Add water to just cover the vegetables in the pot. Cover the pot with a lid and cook on medium until the soup comes to a boil. Lower heat and continue to cook the soup until the vegetables are soft.
Step 3: Cool the Soup and Puree in Blender.
Now the soup needs to cool. The best way to cool hot food is to spread it out into a wide rimmed pyrex baking pan. Pour all of the soup into the pan, and let sit on the counter for 45 minutes. Now ladle the soup into a blender and puree. Pour the contents into the pot. When finished pour the soup back into the pyrex pan and continue to cool on counter for a few minutes until it is tepid. Now cover and place in the fridge to cool for a few hours. If you can do a day ahead, chill in fridge over night. It is important not to put hot food directly into the refrigerator. First the food could spoil because it did not cool evenly, second it is bad for the other food in the fridge.
Step 3: Season the Gazpacho and Add Diced Cucumber.
Now your soup is chilled and ready to finish. Pour back into pot or bowl.
Squeeze a lemon into soup, add black pepper and salt to taste.
If you want more acid, squeeze the other lemon.
If you like some spice add some hot pepper flakes or hot sauce.
Once you like the seasoning, add a peeled diced cucumber.
Mix well.
Serve and enjoy!!!
