It is the time of Thanksgiving and Christmas. We served many at our Thanksgiving Bandara (feast) and look forward to serving everyone for our Christmas Bandara. Everyone is welcome! I wanted to share a few words from my Guru, Ma Jaya Sati Bhagavati on “gratitude”.

This next recipe is super simple, and super healthy, the baked sweet potato. This also is one of Ma’s favorite foods. The key to baking sweet potatoes is to bake them for a longer time at a lower temperature. This allows the sweet potatoes to caramelize. Enjoy!

Always at the Feet of my Guru, Ma Jaya Sati Bhagavati
Ingredients:
- Sweet Potatoes – I like Jewel or Garnet variety – Organic
Utensils:
- Sheet Pan or Pyrex baking dish
- Unbleached baking paper if using sheet pan.
Directions:
Step 1: Wash Sweet Potatoes.
I like using the jewel or garnet variety of sweet potatoes.
Wash them well and place on papered sheet pan or just directly on a pyrex baking dish.
Step 2: Bake at 275 degrees.
Bake in the oven at 275 degrees for about 2 hours
You can rotate the potato after an hour so it bakes evenly.
Everyone’s oven is a bit different so increase temp if after an hour it isn’t moving quick enough. They are done when they are super soft.
Remember the key is longer time at lower temp.
Also the next day they are even sweeter when they are cold from the fridge, and then you can make Sweet Potato Pudding.
