Since i was a young boy, something that stuck with me was how Ma spoke about treating everyone with kindness, and to never hurt anyone.
She would say, Baba says “Treat everyone as the Christ”.
During the holidays, Ma would also say don’t let anyone be alone.
I want to welcome everyone to our Christmas Bandara and to all our meals year round !!!
This next recipe is made from baked sweet potatoes.
Sometimes people ask me, “what did you put in those sweet potatoes?, they are so sweet.”
I don’t add anything to them, the key is baking the sweet potatoes at a lower temperature for longer time.
This allows the natural sugars in the sweet potato to caramelize.
Sweet Potatoes are an awesome and super nutritious food.
I made them for Ma often and she loved them.
Sweet Potato Pudding is inspired from our little Mira Jaya.
She loves sweet potatoes and i was trying to think of a treat for her that was healthy.
There were some left over sweet potatoes from the night before, i pureed them with cinnamon and vanilla and called it pudding !
Now, Mira Jaya knows how to make sweet potato pudding and shows us how it’s done in the pictures !!!

Ingredients & Utensils
- Ingredients:
- 4 Large Garnet Sweet Potatoes – Organic
- 1/4 teaspoon Cinnamon Ground – Organic
- 1/4 teaspoon Vanilla Extract – Organic
- Utensils:
- Baking Dish or Baking Sheet Pan with unbleached baking paper.
- Food Processor
Directions:
Step 1: Wash & bake the sweet potatoes:
Wash Sweet Potatoes and place onto baking dish or baking sheet with unbleached baking paper.
Bake in 275 – 300 degree oven for about 1 1/2 – 2 hours.
Sometimes I’ll flip them after 45 minutes to hour.
Baking the sweet potatoes at a lower temperature allows the natural sugars to caramelize.
When they are very soft then they are done.
Remove from oven and let cool for 1 – 2 hours.
If you cool them and refrigerate overnight they are even better !
Step 2: Remove skin from sweet potatoes, place into food processor with cinnamon and vanilla:
Remove the skin off the cooled sweet potatoes and place into food processor.
Add cinnamon, and vanilla and puree.
Serve and Enjoy !!!
