The grace of gratitude and the grace of the Guru.
This next recipe is very simple.
The fresh shiitake mushrooms are the key to this delicious soup.

Always at the Feet of my Guru, Ma Jaya Sati Bhagavati
Ingredients:
- 1 pkg Fresh Shiitake Mushrooms – Organic
- 8 cups Water
- 1/6 container Mellow White Miso – Organic
- 1 bunch Green Onion – Organic
- Himalayan Salt
Utensils:
- Small Pot with Lid
- Cutting Board
- Knife
Directions:
Step 1: Prep Shiitake Mushrooms.
The stems of the shiitake mushrooms are tough and chewy, so it is best to pull the tops off the stems. You can save the stems for a stock another time because they hold great flavor also.
Step 2: Put Shiitake Tops into Pot and Cover with Water.
Wash the shiitake tops and put into the pot and cover with water (approximately 8 cups). Cover with a lid and bring to a boil, and then lower to a simmer. Cook on low for 20 minutes.
Step 3: Add Miso to Soup and Season with Salt.
Add miso to the broth and mix well until dissolved. Add salt to taste. Add finely diced green onion to garnish.
Serve and enjoy!
