Namaste,
Ma grew up in Brooklyn, NY.
She would say with much joy how this was the “holy land”, the birthplace of the Guru!
She shared many stories and at another time you can hear them as well.
The one thing i will say now was throughout Ma’s life from a very young girl, to Mother, to Guru, she always was taking care of people.
I am blessed to be from Ma’s home as well.
Brooklyn and New York have such a wealth of diverse delicious foods.
I remember my mom would sometimes bring home cold peanut noodles from the city.
Years later, i found this recipe in a cookbook by “Florence Lin”.
I have been making this peanut sauce and noodles ever since. It is that good!
Enjoy!

- Appliances & Utensils:

- Cutting Board

- Stainless Pot – Cook Pasta
- Colander / Strainer – Rinse Pasta
Directions:
Step 1 : Boil Water & Cook Rice Pasta:
A good basic rule for cooking pasta is 1 gallon water per lb. of pasta.
Bring water to boil then add pasta. Stir often so it doesn’t stick to bottom and clump up.
I like to taste test to see if pasta is done. You want it al dente (Italian for “to the tooth”) cooked through but not mushy.
Drain pasta in colander and rinse in cool water, let drain and put to the side.
Step 2: Make Peanut Sauce:
Place peanut butter and oils in bowl and whisk until smooth.
If you are using a salted peanut butter cut the salt in recipe in half.
Add salt and sugar, whisk well.
Add tamari , vinegar and water and whisk until sauce is mixed and slightly thickened (emulsified).
A sauce is emulsified when liquids and oil are combined and stay together. And usually there is an ingredient that acts as the emulsifier. In this case it’s the peanut butter !
Whisk in hot pepper flakes if you want some heat.
Whisk in chopped green onion.
You can also keep this just as a stand alone sauce and serve with rice and vegetables or any thing!
You may want to double the amounts to have more volume if serving as sauce.
Step 3: Mix Pasta with Sauce:
Mix the pasta and sauce until all the sauce has coated the pasta.
Serve and Enjoy !!!
