Parathas are an Indian flat bread, and a favorite at our Kashi meals.
Here is the recipe and I hope you enjoy it.

Always at the Feet of my Guru, Ma Jaya Sati Bhagavati
Ingredients:
- 3 cups Indian Chapati Flour – ( I like “Golden Temple” brand)
- 1 cup White Flour – Organic
- 1 teaspoon Himalayan Salt
- 1/4 cup Vegetable Oil – Organic – (Safflower)
- 1 cup Water – (May need some more)
Utensils:
- Mixing Bowl or Stand Mixer with paddle and dough hook
- Whisk
- Rolling Pin
- Cast Iron Pan
- Spray bottle with Vegetable Oil
Directions:
Step 1: Measure Flour and Salt and Mix Well.
Measure flour and salt into a bowl or stand mixer (like KitchenAid). Use the whisk to mix the flour and salt thoroughly. Add the oil and mix well. If using the mixer use the paddle attachment for mixing the salt and oil.
Step 2: Add Water and Knead the Dough.
Make a hole or space in the center of the flour. Add the water and mix with your hands. If using the mixer keep usmixing with the paddle attachment. If the dough is still too dry or has dry flour, add a bit more water until the dough comes together. You want the dough to be moist, but not too sticky. Too sticky means too much water. You can add more flour if that happens. If doing by hand dust some flour on a clean surface and place the dough on top. Knead the dough until it is smooth and shiny, about 2 minutes. If using a mixer change to the dough hook attachment and knead the dough for about 2 minutes.
Step 3: Divide the Dough into 12 pieces.
Next divide the dough into 12 pieces or sections. Sprinkle each piece with some flour. Press the a piece of dough into the shape of a circle. With the rolling pin and a dusting of flour shape the dough into a thin disk about 1/8 to 1/16 of an inch thick. When using a rolling pin it helps to roll from the center outwards and repeat this in all directions. At first the parathas may not be round, that’s ok, they still will cook nicely. With practice you will get round ones :).
Step 4: Cook the Parathas in a Hot Cast Iron Pan.
Heat up a cast iron pan until hot. Spray a little oil into pan and place the paratha into the pan. Now spray a little oil on the top of the bread. It will begin to puff with bubbles, now it is ready to flip using a metal turner or spatula. 30 seconds and it should be done. The tricky part is getting your temperature good for the pan. If it is too hot, then they will burn. If too cool then do not bubble and brown up. When we make parathas on a large griddle, we turn the griddle on and off to keep our temp in range. A little practice and you will be an expert.
