Devotion to my Guru is everything to me.
It is part of my being and intertwined in everything i do.
My greatest joy is to serve my Guru.
For me cooking and serving others is devotion to my Guru.
With this passion and focus all the food is made with care and love and therefore Ma is shared with everyone.
This is the Grace of the Guru, it is magical and i am so grateful.
Our next recipe is marinated roasted tomatoes. They are easy to make and i am sure you will love making them too.

Always at the Feet of my Guru, Ma Jaya Sati Bhagavati
Ingredients:
- 10 Plum (Roma) Tomatoes – Organic
- 2 cups Olive Oil – Organic
- 1/2 head of Garlic – Organic
- 2 Tablespoons Whole Dried Thyme Leaf – Organic
Utensils:
- Cutting Board
- Knife
- Baking Sheet Pan
- Unbleached Baking Paper
- Saute Pan
Directions:
Step 1: Wash and Prep Tomatoes.
Wash tomatoes and cut lengthwise in half.
Then cut each half section into thirds for a total of 6 wedges.
Place them on the papered sheet pan and continue until the pan is full.
It is best if the tomatoes are not touching the metal edges of the pan.
Step 2: Bake the Tomatoes on Low Heat.
Place pan in the oven and bake at 275 degrees for about 2 hours.
This depends on the size of the tomatoes and your oven so it may be less or more, but allow for 2 hours.
Check them every 10 minutes to make sure the oven is not too hot, and the tomatoes are not browning too fast.
If so, lower the oven temp and continue.
Step 3: Cool Finished Tomatoes, Make Marinade.
The tomatoes are done when they look like sun dried tomatoes.
They look dehydrated but still moist.
Remove pan from oven and cool.
Place the roasted tomatoes in a mixing bowl.
Heat the olive oil in a saute pan on low heat.
Add whole garlic cloves to the oil and cook for ten minutes.
Turn off the heat and add the dried thyme leaf to the oil and garlic.
Now pour the oil mixture over the tomatoes.
Cool again.
Remove the garlic cloves and mix with spoon.
Serve and enjoy!!!
