The falafel is one of the magical foods of the chick pea or garbanzo bean.
The magic starts by soaking the chickpeas overnight, and then grinding them into a fine paste.
Add some vegetables and spices, and you have it !
This recipe for falafel is vegan, gluten free and a favorite served on Kashi.

Ingredients & Utensils:
- Ingredients:
- 4 cups Garbanzo Beans – Dry – Organic
- 2 bunches Italian Parsley – Organic
- 2 bunches Cilantro – Organic
- 1 Zucchini – Organic
- 1 Carrot – Organic
- 1/2 large (or 1 small) Onion – Organic
- 3 Tablespoons Cumin Ground – Organic
- 3 Tablespoons Coriander Ground – Organic
- 2 teaspoons Granulated Garlic – Organic
- 1 1/2 teaspoons Black Pepper Ground – Organic
- 4 teaspoons Sea Salt or Himalayan Pink Salt
- 2 Tablespoons Baking Powder – Organic & Non-Gmo
- 3/4 cup Water
- Safflower or Sunflower Oil – Organic
- Appliances & Utensils:
- Food Processor
- Rubber Spatula
- Mixing bowl
- Cast Iron Skillet
Directions:
Step 1 : Soak the Garbanzo Beans in water for 12 – 18 hours
Wash the garbanzo beans and place into a large bowl or pot.
Cover with a good amount of water because the chickpeas will absorb and expand, then refrigerate.
After 12 – 18 hours, drain the water.
In a food processor blend the garbanzo beans until the beans become a paste like consistency.
Place into large mixing bowl.
Step 2: Wash and finely chop the herbs and vegetables in the food processor
Wash the cilantro and parsley and finely chop in the food processor. Add to the garbanzo mixture.
Wash and cut the vegetables. into small chunks.
Add the vegetables a bit at a time into the processor and finely chop as small as it can get.
Add to the garbanzo mixture. Repeat until all the vegetables are done.
Step 3: Add the Spices, Baking Powder, Salt & Water:
Add all the spices, baking powder, salt and water to the falafel mixture.
Mix well.
Step 4: Pan Fry the Falafel – Best in a Cast Iron Skillet:
Heat the cast iron pan to a medium temperature.
Add a little oil to the pan, enough that the pan is slightly coated.
Mix the batter well and scoop a bit of the falafel mixture and carefully place into the skillet.
It will look like a little patty.
Cook for 30 seconds and then flip over. when brown on both sides remove, cool slightly and taste test.
If the batter has the proper seasoning for you, enough salt, then continue.
Other wise add a drop more salt, mix batter well again and continue frying.
Watch that the temperature of your pan is not too high, frying with hot oil requires great awareness.
