Ingredients & Utensils:
- 11 Organic Roma (Plum) Tomatoes
- 1/4 cup Og. Olive Oil
- 6 cloves of Og. Garlic
- 2 bunches Fresh Organic Basil
- Sea Salt
- Pasta of your choice – regular or gluten free
Directions:
Step 1:
Prep the tomatoes and garlic:
Wash the tomatoes, and peel the garlic.
Cut the very tops off the tomatoes, and dice into medium chunks.
Chop the garlic finely.
Step 2:
Make the sauce:
In a medium to large skillet, cast iron or stainless is best. add olive oil and garlic.
Saute on medium heat until garlic is golden, not very long.
Add tomatoes and stir.
Cook until tomatoes have broken down and are bubbling hot.
Carefully move cooked tomatoes into a blender.
(Note: It is dangerous to blend hot liquids in some blenders, the pressure can push the lid off, so be watchful and put a towel over the lid so you will not get burned.)
Puree the sauce in the blender and then transfer back into the skillet or another sauce pan.
Add washed chopped basil and season with salt.
Step 3:
Make the Pasta:
Make the pasta of your choice and serve with this great simple sauce.
