In India, it is the feet of a holy person that are considered very sacred.
This is because the feet touch the ground and bless the Earth.
Gurupurnima is a special celebration honoring the Feet of the Guru.
It is one of my favorite time’s of the year, full of devotion and gratitude.
Today’s recipe is a no bake fruit tarte.
It is vegan, gluten free, and delicious.

Ingredients & Utensils
- 10 Coconut Rolled Dates – Organic
- 15 Slices of Dried Mango – Unsweetened – Organic
- Water – Enough to just below height of Mango in Vitamix – Organic
- 1 – container Blueberries – Organic
- 1 – container Strawberries – Organic
- Utensils
- Plate
- Vitamix or other high power blender
Directions:
Step 1: Press Dates Into Shape of Crust on Plate:
Press the coconut dates into a disk shape on the plate.
Pinch the outer edge of the crust to have a fluted shape like that of a pastry crust.
Step 2: Make The Mango Puree:
Place the slices of mango into vitamix blender and fill with water just below the top of the mango.
Turn on slow and chop up and gradually increase speed to high.
It will be noisy but will eventually turn into a smooth puree.
Step 3: Pour the Mango Puree onto the Date Crust:
Pour the mango puree onto the date crust.
Step 4: Place Layer of Blueberries, then Sliced Strawberies:
Wash the berries.
Place a layer of blueberries on top of the mango puree.
Slice a few strawberries and fan around the top.
Place a fanned strawberry in the center.
