I started making this southern style cornbread for Ma many years ago.
She loved it.
There is no wheat in this recipe, and the sugar is optional.
It’s very easy and quick to make.
One day this summer, my best sous chef Mira Jaya asked for some cornbread.
She had so much fun making it.
And she made it the best !!!

Ingredients & Utensils
- 1 cup Cornmeal – Organic
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- 2 Tablespoons Sugar – Organic
- 1 cup Yogurt – Organic (non-fat or whole)
- 2 Eggs – Organic ( medium to large in size)
- Vegetable Oil – Organic
- Baking pan – glass or small cast iron skillet
- Mixing bowl
- Measuring cup
- Measuring Spoons (Tablespoon & 1/2 teaspoon)
- Whisk
Directions:
Step 1: Mix the batter and turn on oven to 375 degrees
Turn your oven on to 375 degrees.
In a mixing bowl measure the cornmeal, baking soda, salt, sugar.
Whisk the dry ingredients so they are incorporated.
Add yogurt and eggs and whisk vigorously to make a creamy batter.

Step 2: Pour the batter and bake
Put some oil to coat the sides and bottom of your baking pan or skillet.
Pour the batter into the pan and bake for about 15 – 20 minutes.
It is done when it is golden brown.
You can also test by inserting a knife in the center.
If it comes out cleanly then it is done.
