This recipe is a cold soup and requires no cooking.
It is a simple and refreshing, great in the summer months and a favorite at Kashi.

Ingredients & Utensils
- 3 – 12 oz. bags Organic Frozen Corn Kernels
- 2 Avocadoes – Organic
- 4 cups Water
- Pinch Organic Sugar – optional
- Sea Salt
- Blender
- Strainer or Chinois
Directions:
Thaw frozen corn in the fridge for couple of hours to thaw but still be cold.
Place 2 bags of the corn into a large bowl or pot and add water.
Blend this in a blender.
Pour over a strainer or chinois that is resting on top of a new pot.
Run the back of a spoon over the strainer to get as much corn and liquid to pass through the strainer.
The tough pulpy part of the corn kernels will remain in the strainer, discard this part.
Add the remaining bag of corn into the strained corn soup.
Season lightly with a bit of salt and a pinch of sugar (optional for the sugar).
Remember to add salt carefully. You can always add but you can’t take it out if there is too much.
Prep 1 1/2 avocados. Cut into small chunks.
Whisk into the soup gently, so that some get mixed in and some stay as chunks.
Check for seasoning again.
Slice the remaining 1/2 of avocado into thin slices for garnish.
