Today’s recipe is a healthier version of a mounds bar, one of Ma’s favorites!
These are delicious, and gluten free too!

Ingredients & Utensils:
- 4 cups Organic Unsweetened Shredded Coconut (available in health food stores)
- 7 Large Organic Egg Whites
- 2/3 cup Organic Sugar
- 1 Tablespoon Organic Vanilla
- 1/4 teaspoon Sea Salt
- 3 Tablespoons Organic Corn Syrup (Wholesome Sweeteners makes one (available in health food stores)
- 1/2 can Organic Coconut Milk
- Organic Coconut Oil
- 8 oz. Semi-sweet Chocolate Chips – for chocolate ganache (topping)
- 1/2 cup Organic Heavy Cream – for chocolate ganache
- Mixing Bowl
- Whisk
- Unbleached parchment baking paper
- Baking Sheet Pan
- Double Boiler or Bowl over Simmering Water – for chocolate ganache
Directions:
Step 1:
A note about organic unsweetened coconut. This type of coconut is drier than the type in the supermarket,
it has no added sweetener or additives to make it soft. You can find it most health food stores.
In a mixing bowl whisk egg whites, sugar, vanilla and salt until frothy.
Add coconut milk and corn syrup and mix well.
Add coconut and mix well
Step 2:
Cut your parchment paper to size of pan.
Use some coconut oil to grease the paper and sides of pan.
Spread the coconut mixture in the pan.
Step 3:
Bake in pre-heated 350 degree oven.
When the top is golden brown, the center should be set, about 20 – 30 minutes
Let the bars cool while you make the chocolate ganache.
Step 4:
Chocolate ganache is a smooth melted chocolate that you can use in many desserts.
It is easy to spread over a cake or in this case the coconut bars.
Put the chocolate chips and heavy cream into the top part of the double boiler.
Put water in the bottom part and bring to a boil and the lower to simmer.
(You can also put a bowl over a sauce pan)
Stir the chocolate mixture until smooth and shiny.
Spread over the cooled coconut bars and refrigerate until the chocolate has set.
Cut into bars and serve 🙂
