Hot chai is a special delicious treat.
This recipe is a classical Indian chai with the flavors of cardamom, cinnamon and ginger.
It’s has been a favorite for many years on Kashi, and surely will become one of yours as well.
I learned this recipe from Kumara.
Kumara, who is very close to Ma, learned this from his time spent in India.
Kumara also is the master carpenter who has built all the temples on Kashi.

Always at the Feet of my Guru, Ma Jaya Sati Bhagavati
Ingredients:
- 1 Tablespoon Cardamom Decordicated (whole seeds removed from pod) – Organic
- 10 Whole Green Cardamom Pods – Organic
- 5 Whole Cinnamon Sticks – Organic
- 1/2 lb. Fresh Ginger Root – Organic
- 1 oz. Indian Black Tea – 2 heaping Tablespoons
- 8 cups of water
- 1 gallon Whole Milk – Organic (You can substitute with non dairy beverage of choice)
- 2 cups Half-n-Half – Organic (You can substitute with non dairy beverage of choice)
- 3/4 cup of Sugar – Organic ( adjust to taste for sweetness)
- 2 Tablespoons Vanilla Extract – Organic
Utensils:
- 3 gallon stainless pot ( need 2 pots, one to cook and one to strain into)
- Whisk
- Stainless or Wooden Spoon
- knife
- cutting board
Directions:
Step 1: Cut up Ginger into thin slices, combine with cardamom and cinnamon sticks and water into 3 gallon pot.

Cover pot and bring to boil, lower to simmer and cook for 15 minutes.
Add black tea, and cook for another 10 minutes.
Add whole milk, and half-n-half (or non dairy beverage) and stir well.
Return to a low boil, continue to simmer for 20 minutes.
Keep heat on simmer and stir often so milk does not burn !
Step 2: Strain, add vanilla, serve
Strain the chai into another pot.
Add sugar and vanilla, whisk well.
Add more sugar to adjust sweetness to your liking.
Serve and Enjoy !!!
