The theme is butternut squash 🙂
Butternut squash is so healthy and delicious.
It is one of Ma’s favorite vegetables.
Butternut Fries and Butternut Pancakes in particular are two of Her favorites.
It is great at any meal, especially as a substitute for white potatoes.
Ingredients & Utensils:
- Organic Butternut Squash
- Organic Vegetable Oil
- Sea Salt
- Unbleached parchment baking paper
- Baking sheet pan
- Chef knife
- Cutting Board
Directions:
Step 1: The most challenging part of this recipe is prepping the squash. Butternut squash is very hard, so please be careful !
After washing squash cut the very most top off, the stem side.
Next cut the squash in three sections . Just above the round bulb part. and again in the center of the long part.
Leave the bulb part for last. Flip the other two sections flat so they don’t roll.
Cut the skin off, make sure you go enough past the skin so there are no green lines, just orange.
Now cut the peeled section into slices, then flip over again flat, and cut into Sticks.
The size of the Fries is up to you.
Cut the skin off the bulb section , cut in half and scoop out the seeds, then slice each half into half moon slices.
Step 2:
Toss Butternut Sticks with a little vegetable oil.
Place on unbleached baking paper, and bake in pre heated 350 degree oven.
Step 3:
Should be done in 15 – 30 minutes depending on how thick your cuts are and the squash itself.
Because cooking times vary on the squash,
it is best to check every 5 – 10 minutes.
When golden brown and soft they are done.
Season with salt and serve
