Always at the Feet of my Guru, Ma Jaya Sati Bhagavati
Ingredients:
- 2 cups Wheat Flour – Organic (Note: you could sub with a gluten free flour)
- 6 Tablespoons Sugar – Organic
- 1 Tablespoon Baking Powder – Non GMO
- 1/2 teaspoon Sea Salt
- 2 pinches Cinnamon – Organic
- 3/4 stick Unsalted Butter – Cold – Organic
- 1 Large Egg – Organic
- 2 teaspoons Vanilla Extract – Organic
- 1/2 cup Non-Fat Yogurt – Organic
- 1/2 stick Unsalted Butter – Melted – Organic
- 3/4 cup Blueberries – Organic – (Note – buy 3 cups blueberries total, you’ll need extra for the tops)
- For top of Scones:
- Extra Sugar – Organic – for top of scones
- 2 cups – Extra Blueberries – Organic – for tops of scones
- Half-n-Half – Organic – for tops of scones
Utensils:
- Baking sheet pans – may need 2
- Unbleached parchment baking paper
- Food Processor
- 2 Mixing bowls
- Whisk
- Rubber spatula
Directions:
Step 1: Make Scone Batter:
Mix flour, baking powder, salt and cinnamon in mixing bowl with whisk.
Cut the 3/4 stick of cold butter into small cubes.
Put some of the flour mix into the food processor, add some cubes of butter and pulse until you have small pea size pieces of butter and flour mixed.
Place into an new bowl and continue until done.
In the empty bowl add the egg, vanilla, yogurt, 1/2 stick melted butter, and sugar.
Whisk well.
Add 3/4 cup of blueberries to liquid and mix.
Make a space in the center of the dry mix, add the wet ingredients into this space.
Mix until the dough comes together and there are no dry parts left.
Flatten into a disk about 1 and 1/2″ thick.
Wrap in parchment paper and place into refrigerator for 1/2 hour.
Step 2: Cut the Scones:
Take the disk and cut into 4 pieces.
Take each piece and cut into 3 pieces to give a total of 12.
Place the pieces on a papered sheet pan (you may need 2 pans, depending on their size).
Step 3: Top the scones and bake:
Take the extra blueberries and press into the top of a scone. Cover the whole scone.
Repeat to finish all 12.
Pour a couple drops of half-n-half on top of each scone.
Sprinkle generously the tops of the scones with sugar.
Bake in a preheated 350 degree oven for about 20 – 30 minutes, until brown.
Serve and Enjoy !!!
