These days are hard. There is a lot of pain and a lot of suffering. Ma taught you can pray to your beloved at any time. Your beloved is the form of god, goddess, divine essence, nature or simply love and kindness, that you relate to. My beloved is my Guru, Ma Jaya Sati Bhagavati. I pray to her all the time. I believe a Guru does not need a body to be Guru. I know she is present and doing her pujas and prayers for the whole world.
Let’s do a prayer together. Sit with your eyes closed and take a deep breath in. Say a prayer to your beloved and breath out. Something happens in this moment. I can’t quite describe it. Maybe a feeling that you are not alone, maybe a feeling of calmness. You can continue with as many prayers as you want. Prayers for others and for yourself. Ma always said to be generous with your prayers.
Cooking is a form of prayer too. That is what prasad means, to make food with care and love. Ok now to the recipe…I recently heard that banana bread recipes were the most googled recipe during this time. It makes sense, we all have a lot of ripe bananas.
This recipe is cool because the bananas and raisins do all of the sweetening. These muffins are gluten free and vegan, moist and delicious. I hope you enjoy them.

Always at the Feet of my Guru, Ma Jaya Sati Bhagavati
Ingredients
- Wet Ingredients:
- 6 Bananas – Ripe – Organic
- 1 1/2 Tablespoons Flax Meal – Organic
- 4 1/2 Tablespoons Water
- 1 1/2 teaspoons Apple Cider Vinegar – Organic
- 1 Tablespoon Vanilla Extract – Organic
- Dry Ingredients:
- 2 cups – Gluten Free Flour – Use your favorite or make your own with:
- 1 3/4 cups Oat Flour – Gluten Free – Organic
- 2 Tablespoons Arrowroot Powder (Flour) – Organic
- 3/4 teaspoon Xanthan – (Bob’s Red Mill)
- 1 cup Rolled Oats – Gluten Free – Organic
- 1 1/2 Tablespoons Baking Powder
- 3/4 teaspoon Himalayan Salt
- 3/4 teaspoon Cinnamon Ground – Organic
- 1 cup Raisins – Organic
- 1 cup Walnuts Chopped- Organic
- Non Stick Spray or Coconut Oil – Organic – To grease paper baking
Utensils
- Unbleached Baking Large Cupcake Papers
- Measuring cup
- Measuring Spoons
- 2 Mixing bowls
- Whisk
- Cupcake Pan
- Rubber Spatula or Large Spoon
- Food Processor
- Blender – to grind oats if you don’t have oat flour.
Directions:
Step 1: Mix the Wet Ingredients.
Peel and puree bananas in food processor. Pour banana puree into mixing bowl. Put the ground flax meal into a measuring cup and add water. Stir well and let sit for 5 minutes. Add apple cider vinegar and vanilla to banana puree and whisk well. Add the flax egg (flaxmeal and water) into puree and whisk well
Step 2: Mix the Dry Ingredients.
In a separate dry mixing bowl add 2 cups GF flour or make your own following the ingredients above. I always make my own by grinding rolled oats in a blender, then adding arrowroot and xanthan (binder). Whisk your GF flour well. Add remaining dry ingredients, whole rolled oats, baking powder, cinnamon, and salt. Whisk this mixture thoroughly. Next add chopped walnuts and raisins. Mix dry ingredients again.
Step 3: Add Dry Ingredients into Wet and Mix Well.
Add dry ingredients into wet and thoroughly mix with large spoon or rubber spatula Let the batter sit for 5 minutes. It will thicken slightly.
Put cupcake papers into cupcake pan and lightly spray with non stick spray. Mix batter again, and spoon into cupcake papers. Fill until batter is finished, about 12 muffins. Bake at 375 degrees for about 30 – 40 minutes until lightly brown and set up. Remove from oven to cool.
