Many years ago I started making sushi for our Open House.
I made sushi rolls for Ma. She really loved them.
This recipe is a great way to serve the whole sushi experience
in one bowl. The pungent sweet ginger, creamy avocado, spicy wasabi
all in one bowl, and one bite !
This is a favorite at Kashi.

Ingredients & Utensils
- 3 cups Organic Sushi Rice
- 4 1/2 cups Water
- 8 – 10 Organic Nori Leaves
- 4 Organic Avocadoes
- 1/2 cup Organic Raw Sesame Seeds
- Organic Gluten Free Tamari (Soy Sauce)
- Pickled Ginger Slices (Asian market)
- Wasabi Sauce:
- 1/3 cup Organic Tamari
- 1/3 cup Organic Cane Sugar
- Small piece of peeled Organic Ginger Root
- Wasabi Paste (Asian market)
- Seasoning for Rice – “Su”:
- 4 Tablespoons Organic White Vinegar
- 2 2/3 Tablespoons Organic Cane Sugar
Directions:
Step 1: Cook the Rice and Season with “Su”
This is probably the most important part. Making good sushi rice is the key.
If you have a rice cooker than use it, otherwise cook on the stove top.
While the rice is cooking now make the “Su”. This is the seasoning for the rice,
and what gives the rice a subtle sushi flavor. In Japan this is considered
one of the most important parts to making sushi. In a very small pot
combine the “Su” ingredients and on low heat dissolve the sugar and salt into the vinegar.
Do not evaporate (boil) the mixture.
The rice should be done in 30 minutes. Remove from cooking pan into a bowl.
Spread it out with a spoon to allow the steam to leave.
Next sprinkle the “Su” over the cooked rice and mix the rice at the same time.
This is so the rice is evenly coated and seasoned.
Now cover with a lid and move on to next steps.
Step 2: Prep Avocado, Make the Wasabi Sauce, Toast Sesame Seeds
Wash, and cut the avocados in half, take out pits, peel the skin, put in bowl.
Place the wasabi sauce ingredients in a blender and blend.
Put in a small bowl or measuring cup.
Toast the sesame seeds lightly in a small skillet, then put into small bowl.
Step 3: Assemble the Sushi
I like to assemble the sushi on cutting boards. If you have more than one than use 2 boards.
Place nori sheets rough side up, probably 1 or 2 per board. This photo is from making in a large batch 🙂
Spread layer of rice on top of both sheets. Sprinkle the wasabi sauce over the rice with your finger tips.
It doesn’t need to be drenched, just sprinkle over evenly.
Place a half of an avocado on top of each sheet. press it into the rice, flatten it, or mush it with your palm 🙂
Sprinkle with some tamari, lighlty.
Place a few strips of pickled ginger on top.
This pickled ginger was homemade, but you can buy in most Asian markets, and even supermarkets now.
I’ll show how to make pickled ginger (it’s easy) at another time.
Sprinkle with sesame seeds.
Step 3: Cut and Serve
Slide one sheet on top of the other.
With a large chef knife cut into small squares.
Place cut squares into a serving bowl.
